Gluten Free Cheese Balls

I found a post on Pinterest the other day for baked cheese balls.  I can't tell you how much this had my mouth watering!  I LOVE cheese sticks and I haven't had one in YEARS.  Anything breaded is a big problem for me because I can't eat gluten.

I was left to drool over that food porn I tell yah.  I just couldn't get my mind off of it.

Yesterday, I picked my youngest up from school and made a dash to the supermarket.  The infamous Pinterest cheese balls are made from your average every day peel and eat cheese sticks.  I KNEW I could do these gluten free or at least go down trying!

As I've said before here, I'm terrible at measuring.  I eyeballed this and based it on the original recipe which is to dip cut the cheese string up, dip in milk then dip in flour and bake at 425 degrees for 10 min.

And may I present you with Gluten Free Cheese Balls!

Gluten Free Cheese Balls

Coating:

1/2 cup of King Arthur gluten free flour or what ever GF flour you have on hand
1/2 tsp of paprika
pinch of salt
pepper

1/2 cup of milk to dip

I cut the cheese and froze it for about a half hour.

I dipped it in milk then dredged in a GF the above GF flour mix.  The cheese bits didn't have enough "coating" so I put in them back in the milk, added a TINY bit of milk to the breading and threw them back in and shook it all with the lid on.  Viola!.

I cooked them in my convection toaster oven for 6 or 7 min at 400 degrees  I watched them VERY carefully and when they started to melt I pulled them out.  Some were PERFECT balls others were a bit exploded.  They were ALL REALLY yummy!
